Oh how I love fall! It is the time of year where I can dig out my sweaters, thermals and boots. It is also the time of year where I dig out my cozy blankets for the cool nights I enjoy while sipping my coffee. Yes, I love love drinking coffee after dinner. Decaf, of course.
In my house we always say, “It’s good for the digestion!”
Another thing I love is that with the cool weather comes the want to bake! And I do love to bake. The oven can go as hot as it wants! I am not scared.
So, what treats to I like to make this time of year?
Well, first and for most I must mention my favorite thing of ALL TIME!!! Caramel apples!
When I was a kid living in Texas, my sister would take me out to this house that had a little festival in their front yard every year. One of the things they had was a barrel full of water and apples. Using just your mouth you dove into the barrel to pull out your apple. It sounds easy but trust me it is not! Once you get your apple you then take it over to another booth were you make delicious things happen.
That is how I know it is fall, when I have one of these babies.
Now I normally try to always use a Granny Smith apple, I am sure you can use any apple you love. Though I would trust the experts not me on this.
Another thing I enjoy this time of year is, Apple Cider! Unfortunately, since I am STILL trying to lose baby weight I can not have too much of this stuff. Apples seem to have a high sugar content, but hey everything in moderation.
The first time I had this stuff, I admit, I bought it from the store. Then one day while I was feeling a little under the weather I made some from apple juice I had in the fridge. I just threw some stuff into mine that I thought would taste good. Stuff like cinnamon, and allspice. To make sure yours comes out awesome, I’m going to give you a favorite recipe of mine. Of course this is also the time of year where we all overdoes on PUMPKINS. I love love making pumpkin pancakes, pumpkin bread and muffins.
My pancake recipe is as follows:
to make an entire batch!
Four cups of flour
3 tablespoons of baking powder
2 teaspoons of baking soda
3 tablespoons of sugar
1 teaspoon of salt
If this sounds familiar that is because I use Nigella Lawson’s recipe for my base! I keep this mix on hand when I want to make pancakes, so here is what I do when I want to make a dozen or so little pancakes.
I cup of mix
I cup of milk
I tablespoon of butter (melted and unsalted)
1/4 cup of Pumpkin puree. I sometimes like to add pumpkin pie spices to this!
(Again, I follow Nigella’s instructions but add the pumpkin. To get the consistency that you want, you may have to add more mix to it, so it’s not so wet!)
Cook like you would any pancake. Let the bubbles form and the edges come up from the pan, then flip!
Serve with maple syrup!
